Caciocavallo: a sweet semi-hard cheese, it tastes like a cross between Parmesan & Gouda. Originating in Sicily, it's now wide spread across Italy and beyond. The literal translation means "cheese on horseback," and though sometimes speculated to be made from horse's milk, fear not! It's actually made from sheep or cow's milk. Makes a mean grilled cheese, but also great on its own or in salad.
